Celebrated a birthday at The Cut and we were completely blown away! Great ambiance and wonderful staff who gave us brilliant food recommendations. Everything we ordered was spot on. The Yellow Fin Tuna and Prime Rib Empanadas were spectacular starters. The signature beef melted in our mouth, and the Scotch fillet was outstanding. The Mac & Cheese was pure comfort food, and the Brussel sprouts with that amazing sauce were a huge highlight. So happy we chose this place for a special night!
The Cut, tucked into the basement of a heritage building in The Rocks, has become one of my go to spots in the city and the food is fabulous every time. The whole menu is built around premium Australian beef, and the kitchen cooks it superbly. What really sets the place apart is its in-house beef ageing program, showcased through The Butcher’s Cut a rotating selection that puts whatever’s at its peak front and centre. Last time in, I had the dry-aged Kidman Wagyu Rib Eye, marble score 5+, a full kilo of it. It was fantastic rich, beautifully marbled and cooked exactly the way you’d want from a kitchen that clearly knows its beef. The basement setting adds a lot to the experience, too. There’s a warmth and character to dining inside an old heritage building that suits the food perfectly. If you’re after a serious steak in town, The Cut is well worth a booking. Highly recommended.
Exceptional in every sense! We had the best prime rib ever, offering superior flavor and moisture, with phenomenal marbling, a perfect medium-rare center, and a wonderful seared, salty crust. Their French fries are thick and very crispy, and their small prime rib empanadas were also very good. But the prime rib just steals the show! Hand carved right in front of you and paired with some great sauces, it made for a very memorable dinner. I can understand why The Cut was voted as one of the best 101steakhouses in the world. It is a well-deserved accolade!
We had the best time dining here, service was 10/10 she was particularly amazing with our 6 year old and the meals were perfection. We loved the 450g prime rib it was juicy and tender definitely the star of the night, the tallow aged Wagyu was just as delicious. Will definitely visit again!
Hidden away in an intimately lit basement of a heritage building in The Rocks lies Australia’s greatest prime rib. This signature special not only lived up to the hype but exceeded all expectations. We visited for lunch on a Sunday which features the weekend special of a sizeable and delicious roast. The king prawns in garlic butter and scallops in kombu butter were also delicious. Service is good and our host Holisha was attentive and explained each menu item with detail and enthusiasm. Looking forward to the next visit.
