Dashi Ramen & Robata delivered one of the most satisfying ramen dinners I've had in a while. We started with their Gyokai Tonkotsu Ramen, their signature blend. The broth is rich, deeply layered, and beautifully balanced. You get the creamy body from the tonkotsu, while the seafood-based dashi adds a savoury depth and subtle umami that keeps every sip interesting instead of feeling overly heavy. The noodles had a great bite, and everything came together into a comforting, well-rounded bowl. The real standout of the night, though, was the Spicy Tantan Mazemen. For anyone unfamiliar, mazemen is a brothless ramen where the noodles are tossed with a concentrated sauce and toppings before eating. Unlike abura soba, which is typically built around seasoned oil and soy sauce for a simpler, oil-forward flavour, tantan mazemen is much richer and more complex, combining sesame paste, chilli, spices, and aromatic seasonings into a thick, flavour-packed sauce that coats every strand of noodle. This was easily the highlight of dinner. The seasoned mince was juicy and packed with flavour, the spice level had just the right amount of heat without overpowering the dish, and the nutty sesame brought everything together perfectly. Every bite was rich, bold, and incredibly addictive—I couldn't stop eating it. I'll definitely be back to work my way through the rest of the menu. If the quality of these two dishes is anything to go by, there's plenty more worth trying.

Had dinner here with my family and had a great experience. The ramen was delicious, with a rich and flavourful broth. The donburi was tasty as well, although the portion was on the smaller side. The staff were friendly, attentive, and had a great eye for detail, making us feel well looked after.

My partner and I ordered the Yuzu Shio Ramen, Spicy Tantan Mazemen, and Pork Gyoza. The Yuzu Shio Ramen was light and refreshing, with a delicate citrusy yuzu broth that wasn't overpowering. The chicken was incredibly tender with a slight char, adding a nice depth of flavour. In contrast, the Spicy Tantan Mazemen was rich, bold, and packed with spicy, nutty flavours. It came with a side of miso soup, which was enjoyable on its own but a little too salty when paired with the already intensely flavoured noodles. Both dishes were beautifully presented, and the ramen eggs were cooked to perfection with creamy yolks and a delicious umami seasoning. The pork gyoza was equally impressive, featuring a crispy, golden pan-fried exterior and a juicy, flavourful filling. We were also fortunate enough to try their oyster blade beef skewers, which are currently in development. The beef was cooked perfectly tender and coated in a sweet glaze that made every bite incredibly juicy and full of flavour. The skewers were served with wasabi on the side, and adding a little wasabi elevated the dish to a whole new level. I'm excited to see these added to the menu—they're definitely something to look forward to.

Had the Shio Tonkotsu $24 - it's pretty good in an area that's a ramen desert. Soup was light and flavourful, though I prefer a thicker soup. All the requisite toppings were plentiful and it was nice to have 2 types tsukemono (pickles) included. The standout by far was the chashu - 12/10. It's like a rare roast beef but with a smoky pork flavour. I didn't know pork could taste like that - it blew my mind! Normal chashu is dry and chewy by comparison. Elvis, the owner-chef previously ran a BBQ restaurant, so that explains why its so damn good. The menu is also extensive with different ramen options - I am very keen to try the chicken ramen. One suggestion would be to have a condiment section for things like white pepper. Thank you for opening, I am pleased that a place like this is open in an easily accessible location in Strathfield. I will be back 🙏

Overall, a solid Japanese restaurant and definitely worth a visit. The ramen was enjoyable, but I felt the broth could have had a bit more depth of flavour and a creamier texture to really make it stand out. The meat was tender, although the portion was a little on the small side considering the price.
