I had one of the most memorable omakase experiences here. Chef Jun is not only warm and friendly, but also brings his own creativity and philosophy to every dish. The sashimi was incredibly fresh and of outstanding quality throughout the meal. The sesame tofu was particularly impressive and left a lasting impression on me. I’d definitely love to come back and bring my friends to experience it as well.
I came to try the omakase at Tsuzumi after it was recommended by a Japanese friend. Chef Jun was incredibly friendly, every dish was delicious, and the atmosphere he created made the whole experience so enjoyable. Not just the food, but the overall experience felt really special. Definitely one of the Japanese restaurants I’d recommend in Sydney.
Full read: 2 minutes Overall, the service and customer attention to detail is what clearly shined in the chef's food and restaurants dining. The taste however cannot compare to other omakazes that Sydney has to offer at the similar price point of $250 pp. Not all dishes had photos. #1 Assorted appetizers: 5/10 Smelling and visually stunning in detail and execution, however the tasting profile of each dish - sour, savoury, sweet and freshness were confusing to start. #2 Sesame Tofu: 6/10 Combo of Sea Urchin and Tofu was nice, lacking sea urchin to tofu ratio. Sea urchin was around 2nd-3rd tier grade. Individual elements or combining wasabi tofu and sea urchin does not match. #3 Miso Lobster: 7/10 Slightly over for my liking. Cutting it into 3 bites may have caused the flesh to cook faster than expected. #4 Abalone : 8/10 Steamed over 12 hours, the soft spoon provided easy cut through its flesh. The sauce combo matches well. Only lacking was the risotto ratio to Abalone was too low, a bit more rissoto would had made the dish more complete per bite. #5 Sushi run - overall 10/10 Where most sushis were awesome, there were hit and misses, mostly when doing too much or not enough to bring out the fishes taste, particularly poor with the hand roll as my seaweed cracked and broke when handed to me, and the sourness of the aged tuna was too much. The cuttlefish was absolutely awesome with the Yuzu zest! Cuttlefish - 11/10, absolutely perfect! Toro - 10/10 Ocean Trout - 10/10 John dory - 10/10 Flamed Toro - 9/10 Eel - 8/10 Sea Eel - 8/10 Hand roll - 5/10 #6 Tamagoyaki - 6/10 Fluffy and cake like, it felt like a dessert than an egg omelette, it didn't suit as part of a main course in a Japanese style omakaze. Should it was reclassified, say under deserts then it would be a 10/10. #7 Matcha daifuku - 7/10 You can simply get the same thing at Ice Kirin. Adding strawberries that were not ripe did not help the course.
Amazing omakase experience! The atmosphere was great, the sushi was incredibly fresh and delicious, and even the dessert was perfect. Service was attentive and friendly throughout the meal. I will definitely visit again.
